About Greg DuerfeldtGregory Duerfeldt, 38, is from the beautiful Island of Maui . He was literally raised in the restaurant industry. Since graduating from the Western Culinary Institute in 1992 he has worked all over the USA for Hyatt, Marriott, Prince Hotels, and the Ritz-Carlton. He has worked under some of Hawaii Regional Cuisine's greatest Chefs including Glenn Chu, John Benson, Patrick Callarec, Roger Diakon, and Corey Waite. He has done events with Beverly Gannon, Sam Choy, Jean-Marie Josselin, Russel Siu, and Alan Wong. Under Glenn Chu he cooked at the James Beard House in 1998 (Glenn's restaurant "Indigo" is a James Beard award winning restaurant). He also participated in promotions for the state of Hawaii (under Chef Glenn Chu) in Taipei and Shanghai . Read more about Moon River Diner here:
