About Greg Duerfeldt

Gregory Duerfeldt, 38, is from the beautiful Island of Maui .  He was literally raised in the restaurant industry.  Since graduating from the Western Culinary Institute in 1992 he has worked all over the USA for Hyatt, Marriott, Prince Hotels, and the Ritz-Carlton.   He has worked under some of Hawaii Regional Cuisine's greatest Chefs including Glenn Chu, John Benson, Patrick Callarec, Roger Diakon, and Corey Waite. He has done events with Beverly Gannon, Sam Choy, Jean-Marie Josselin, Russel Siu, and Alan Wong.   Under Glenn Chu he cooked at the James Beard House in 1998 (Glenn's restaurant "Indigo" is a James Beard award winning restaurant).  He also participated in promotions for the state of Hawaii (under Chef Glenn Chu) in Taipei and Shanghai .
 
Gregory visited Shanghai first in 1998 and fell head-over-heels in love with the pulse of the city.  He moved there full time in 2001.  After a short contract at a fusion restaurant called Colors he joined the catering company The Party People, owned at the time by Sok Featherston. In 2004 he, with two other partners opened the first Moon River Diner. He currently spends most of his time moving between the four existing diners flipping Shanghai 's best burgers!
